Inspector's notes

In small cooler near the register, observed in house made tzatziki (yogurt) and tahini (garbanzo bean) having internal temperatures of 51*F. Also, in the low boy cooler, observed raw chicken and bacon having internal temperatures of 46-49*F. Person in charge states these foods were placed in the coolers less than 3 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed employees actively washing dishes in 3-compartment sink without the sanitizing step. Per person in charge (PIC), dishes are scraped, rinsed, washed with soap & sanitizer mixture, rinsed, and then air dried. Discussed with PIC and employee about proper dishwashing procedure. Dishes should be washed, rinsed, sanitized and then air dried. Chlorine sanitizer solution should be tested every time it is set up and test between 50 to 100 ppm. Employee set up 3-compartment sink in proper order to rewash dishes at time of inspection. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Provided PIC with guidance document on warewashing at time of inspection. Corrective Action: Corrected at time of inspection.

Establishment observed having installed new walk-in cooler. Installation of walk-in coolers requires submission of remodel to MCESD.Discussed warewashing procedures. Discussed with PIC that warewashing requires 3 distinct steps: washing, rinsing, and sanitizing.Discussed cleaning frequency for wall near fryer/trash can on cook line. Also discussed repairing wall behind 3-compartment sink. Discussed use of non-absorbent, waterproof material such as FRP. Discussed fly tape and fly light design and installation requirements.

Observed cut lettuce in stacked, covered containers in walk-in cooler at 70-72'F. Per PIC, lettuce was cut 2 hours prior to inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
