Inspector's notes

Observed several TCS foods in reach-in refrigerator on cook line with internal temps ranging from 48-60 degrees at time of inspection. Ambient temperature of unit measured 53 degrees at time of inspection. PIC stated that foods had been inside unit since the previous day. PIC voluntarily discarded improperly cold held foods at time of inspection - see embargo list. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Instructed PIC to discontinue use of unit until in good repair. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed in use high temperature dishwasher reaching an internal temperature of 147*F at the surface. Discussed with Person in Charge (PIC) the importance of proper sanitizer levels and proper monitoring of sanitizer levels. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. PIC had employees rewash the dishes in the three compartment sink while facilities worked on the machine. Corrective Action: Corrected at time of inspection.
