In walk in cooler, in dairy section of cooler, assorted dairy drinks, lunch meats, bacon with internal temperatures of 47*F-50*F. Per manager TCS foods were in walk in cooler >24 hours. Manager discarded assorted dairy and dairy drinks, lunch meats, and bacon. Ambient temperature of dairy section of walk in cooler was 49*F, taken with inspector min/max irreversible thermometer. In self service island cold case, on top two shelves, TCS foods (cheeses, deli sandwiches, desserts, meats) with internal temperatures of 48*F-51*F. Per manager, TCS foods were in island cold case >24 hours. Manager discarded TCS foods (cheeses, deli sandwiches, desserts, meats). Ambient temperature of island cold case was 41.7*F, taken with inspector min/max irreversible thermometer. Discontinue storing of TCS foods in dairy walk in cooler section and top two shelves of island cold case until able to maintain proper temperatures throughout the day. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
