Observed TCS foods such as yogurt cups, milk cartons, and cheese and sausage cups in open air cooler for over four hours with internal temperatures between 46°-48°F. Items had been placed in front of air curtain. All other TCS items in unit behind air curtain were 41°F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.
