Inspector's notes
Observed an open package of sliced salami, dated 1/1, an open package of sliced ham, dated 12/25, and an open package of hot dogs without a date mark. PIC discarded the TCS foods for being held past the discard date or with an unknown start date, see embargo form. Date marking requirements apply to containers of processed TCS food that have been opened and to food prepared by a food establishment, in both cases if held for more than 24 hours, and while the food is under the control of the food establishment. Based on a predictive growth curve modeling program for Listeria monocytogenes, ready-to-eat, time/temperature control for safety food may be kept at 41F, for a total of 7 days. Adding 6 to day one (6+1) determines the discard date. PIC will retrain employees. Corrective Action: Corrected at time of inspection.

Unit at 1:15pm is ambient of 45*F-50.9*F with min/max thermometer. Foods: trays of prepared salads at 56*F; tray of prepared cantaloupe bowls 48*F; container of cut lettuce at 50*F; milk at 50*F; yogurt at 50*F; cream cheese at 50*F; tomato juice at 50*F. Notified Person In Charge (PIC). PIC directed employees to place all listed tcs foods into main walk in unit to cool to 41*F. PIC directed employees to move all listed products to main walk in to cool to 41*F. Verified after 1 hr. Temperature last log was at 10am. Unit was at 39*F.
