Observed smoked sausage at steam table at 118*F. As per the staff sausage was placed at steam table at 1 hour prior to to the inspection. Hot hold to be at 135*F or greater. Staff reheated sausage to 165*f in bath and returned to steam table. Advised staff to verify holding temperatures throughout the day with a metal stem thermometer. Corrective Action: Corrected at time of inspection.
