Observed recently cooked chicken in large grey tote covered with plastic wrap in walk in cooler at 154*F. Food may be placed in walk in cooler uncovered to cool. Food should be stired regularly to assist in cooling. Foods may be cooled from 135*F - 70*F within 2 hours and then 70*F - 41*F in an additional 4 hours. Chicken was uncovered to allow rapid cooling.

Inspector's notes

Observed raw bean sprouts and cut leafy greens in small top opening cooling unit at 45*F. As per the person in charge items were placed in unit at approximately 10:30 am. Cold hold of food must be at 41*F or lower. Items were removed from cold hold unit and discarded. Advised staff to verify cold hold temperatures after lunch rushes using their metal stem thermometer. Corrective Action: Corrected at time of inspection.

Top opening cooler beside handwashing sink had the following TCS foods measuring an internal temperature of 52-54'F: raw bean sprouts, leaf lettuce, cabbage, and a carrot cabbage slaw. Food had been placed into cooler approximately 2 hours prior. Kitchen staff iced down food. TCS foods shall be held at 41'F or lower when cold holding.
