Inspector's notes

Walk-in refrigerator measured with ambient temperature between 55°F and 60°F. 1 case of hot dogs measured with internal temperature of 55°F. Per PIC, this item had been placed in unit approximately 1 hour prior to inspection and all products will be fully reheated within the next 2 hours. PIC transitioned product from cold holding to time as a public health control for this event and will ensure that any unused product is discarded at the end of the event. No other TCS products were being stored in the unit and PIC agreed that no TCS products will be stored in unit until it has been repaired. Facility has adequate cold holding capacity to maintain regular operations with the limited number of TCS foods on the menu. Corrective Action: Corrected at time of inspection.
