Observed the larger of the 3 cold tables on the prep line with an ambient temperature of 57*F. The unit contained items including cooked spinach, cooked onions, minced garlic, diced tomatoes, sliced roast beef, sliced ham, diced bacon, cooked diced chicken, cooked sausage crumbles, sliced pepperoni, sliced salami, and sliced capicola. With inspector probe thermometer the items measured 55*F-56*F. The person in charge voluntarily discarded product at time of inspection. Discussed with the person in charge that all TCS items should be maintained at 41*F or below when cold holding. Corrective Action: Corrected at time of inspection.
