Inspector's notes

Observed food employee immersing cutting boards in quaternary ammonium sanitizer at the three compartment sink for less than 10 seconds and then set them aside to air dry. Immerse all food contact surfaces for at least 30 seconds to 1 minute or per manufacturer instructions. Cutting boards were placed back in sanitizer to fully sanitized.
