Per PIC the sauce was stored at ambient temperature then placed in the container less than 4 hours prior to inspection. Discussed with PIC proper cooling methods of using ice and water baths, shallow uncovered containers, keep bags of sauce in the walk-in so it is not cooling from ambient temperature or by any other effective means. Cooling temperature control for safety (TCS) items from ambient temperature shall be completed in 4 hours. Correct By: Corrected At Time Of Inspection
