Observed the following vacuum sealed bags in walk in freezer: cooked shredded chicken 6/6, cooked beef with no date and raw salmon 8/4. Per person in charge beef was cooked the same day as the chicken 6/6. Reviewed Reduced Oxygen Packaging (ROP) exemptions with operator and a variance with HACCP plan is required to hold anything in ROP in establishment for more than 48 hours. ROP is NOT approved for fish unless the fish is frozen before, during and after packaging. Provided ROP Without a Variance guidance document as well as information to obtain a variance. See embargo.
