Dish machine in kitchen measured at 0ppm chlorine. Chlorine should measure between 50-100ppm for proper sanitization. PIC called maintenance and will utilize three compartment sink with quat sanitizer until machine can be repaired. Ensure machine is tested daily for proper sanitization levels. Corrective Action: Corrected at time of inspection.

Sanitizer must measure at 50-100ppm for proper sanitization. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Corrective Action: Corrected at time of inspection.
