Observed the hand sink in the product sorting room reaching a maximum of 78*F. Observed the hand sink in the main warehouse near the receiving office reaching a maximum of 77*F. Informed PIC that all hand sinks must reach 100*F for proper hand washing. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Correct prior to re-inspection on 7/2/2026.

Observed boxes of raw chicken stored above boxes of beef steak. Observed boxes of raw bacon stored above ready-to-eat foods, meat and cheese stick snacks and cooked pot roast. Observed a full palette of raw bacon stored above boxes of cooked sliced turkey breast. Discussed with PIC that all raw animal proteins must be stored according to final cooking temperature and should never be stored above any RTE foods. Reviewed proper storage with PIC. Provided storage document via email. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.
