Inspector's notes

Observed chicken in sealed pack being thawed in water, where only half the product was covered by water, and it wasn't running. Product was there for 3 hours, manager put back in the freezer. Talked to manager about thawing techniques. Ensure that thawing product is put in walkin, or under running cold water and fully submerged and the product doesnt get above 41F. Corrective Action: Corrected at time of inspection.

Observed Ham, roast beef, turkey and chicken salad holding at temperatures between 51*F and 60*F. All meats were in unit overnight. Had PIC discard all items. See embargo.
