Ensure that all TCS foods during cold holding are kept at 41F or less.

Observed employee with gloves touching raw chicken and touching clean surfaces in the kitchen (black utensils, yellow utensils, microwave door, etc) with gloves with raw chicken on them. Talked to manager about handwashing policy and which surfaces are clean vs raw animal products. Ensure that handwashing is occurring going from dirty to clean tasks in the kitchen.
