Observed birria at 44*F and chili verde at 60*F in walk in cooler. As per the employees both items were prepared the night before (10pm) and placed in walk in cooler to cool. Both items were deeper than 4 inches in depth to cool overnight (12.5 hours). Cold hold of food to be 41*F or lower. Advised staff to mark with time cooling started (135*F) on container, date once cooled to 41*F. Verify cold hold temperatures using a metal stem thermometer. Corrective Action: Corrected at time of inspection.

Observed multiple food items in walk in cooler at temperatures above 41*F. The following foods were embargoed and discarded: Green Salsa 53*F, Red Salsa 47*F, Rolled Tacos 46*F, Mini Tacos 49*F, Shrimp 48*F, Ceviche 47*F, Mochaca 48*F. Raw meats including beef 45*F, and chicken 45*F in walk in cooler were placed in freezer to cool until walk in cooler is repaired. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed walk in cooler with an ambient temperature of 50*F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Person in charge contacted repair company for service while on site. Second owner arrived on site and was able to turn down thermostat in walk in cooler . While completing inspection the ambient temperature inside was able to drop to 40*F with air blowing at 35*F Corrective Action: Corrected at time of inspection. Ambient temperature dropped to 40F. Repair company arrived to repair while completing inspection. Advised staff to observed thermometers in unit to verify unit can hold food at 41*F or lower.
