Inspector's notes

Chef after removing cooked pita bread from the oven, re-arranged pita bread bare hand on the tray and placed the tray in hot holding sham. Chef was advised to minimize bare hand contact with cooked bread (ready to eat food) using tongs, gloves or deli paper. PIC discarded contaminated bread with bare hand. The owner requested for an exemption. Referred the owner to department's variance program and provided policy procedure via email. Corrective Action: Corrected at time of inspection.
