Observed a box of pre-sliced salami labeled "Keep Refrigerated" on a cart outside. Salami was at 71*F. All TCS foods must remain above 135*F in hot holding or below 41*F in cold holding. In this scenario, the salami should have been placed in the fridge upon receiving it. Salami had been there for 45 minutes and was moved to the walk in cooler to rapidly cool. Corrective Action: Corrected at time of inspection.
