Inspector's notes
Observed steam table that contained TCS items including cheese sauce and cooked beans. With inspector probe thermometer the cheese sauce measured 109*F and the beans measured 128*F. The water in the base measured 120*F. The cook stated that the food was placed in the steam table 1 hour prior to inspection. The cook took items and reheated them to 165*F at time of inspection. Discussed with the person in charge that TCS items should be held at 135*F or higher when hot holding TCS items. Corrective Action: Corrected at time of inspection.
