Pasta noodles, fruit salad, mashed potatoes stored in 8 inch plastic containers tightly sealed in walk-in with temperatures ranging 45-54*F. Person in charge stated foods were prepared within 2 hours of inspection actively cooling. Foods actively cooling should be loosely covered and stored in 4 inches or less to facilitate rapid cooling. Person in charge to have employee remove lids and arrange in shallow containers. 3-501.15 (B) - Core: Cooling Methods; Covered and Properly Arranged Containers. PIC supplied paper towels for both sinks at time of inspection. Hand drying towels must always be available at all hand washing sinks. Corrective Action: Corrected at time of inspection.

Residual moisture on the hands can increase the level of touch-contact associated bacterial transfer following handwashing.
