Inspector's notes

Observed a sealed plastic container with cooked chicken with an internal temperature of 101*F. Internal temperature registered with an internal probe thermometer. Per PIC the chicken was cooked to temperature, removed from hot holding, and placed on counter to cool. PIC stated an employee transferred chicken to container, sealed with a lid, and placed in reach-in refrigeration unit greater than 2hrs prior to time of inspection. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Educated PIC that when cooling food, all containers should be open topped, shallow containers, to allow for rapid cooling. Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food being held inside a prep-unit with an internal temperature of 49-51*F. Internal temperature registered with an internal probe thermometer. Per PIC all food was held in unit overnight except sausage gravy which was opened and placed in unit that morning. Educated PIC that cans held at room temperature should be cooled once opened before being placed inside prep-unit. Ambient temp of unit registered 41*F with min/max thermometer. TCS food items included; cooked ground beef, shredded chicken, corn beef hash, and chorizo. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

Observed an in-use ice machine with black, slimy, organic-like material growing on the deflector panel. Per PIC ice from the machine is used in customer drinks. Educated PIC that ice is considered a food item when used in customer drinks. Instructed PIC in clean-in-place procedure using a hot soapy rinse, hot water rinse, and hot water plus sanitizer rinse. Correct by next routine inspection.

Educated PIC that TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding. PIC relocated food items to grill top for rapid heating to 165*F before placing in hot holding. Corrected at time of inspection.
