Observed an accumulation of organic matter on the top interior of the ice machine in the back of house. Discussed with PIC increasing the frequency at which the ice machine is cleaned. Food contact surfaces should be cleaned at a frequency to prevent the accumulation of food debris and organic matter. Corrective Action: Correct prior to next routine inspection.

Observed the plastic ice shield inside the ice machine in the back to broken such that the shield has rough, jagged edges, making it difficult to properly clean. Additionally observed the ice machine to be leaking water onto the ground. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
