Observed the establishment's maximum temperature registering device off by 48*F. Upon running through the ware washing machine the establishment's thermometer read 131*F and inspector's thermometer read 179*F. Informed PIC that an accurate maximum temperature registering device is required to be obtained prior to reinspection on 03/23/2026. PIC has ordered thermometer, but it is on backorder. Food temperature measuring devices and water temperature measuring devices on ware washing machines shall have a numerical scale, printed record, or digital readout in increments no greater than 1ᵒC or 2ᵒF in the intended range of use. Inspector's notes
Observed TCS foods on the left side unit prep table with internal temperature ranging 50*F-55*F. These foods included sliced tomatoes, shredded lettuce, shredded cheese, and tomato sauce. The ambient air temperature of the unit was 40.1*F measured using min/max thermometer. PIC stated that these items had been placed in the unit about 45 minutes prior and they do not keep any foods from the lunch service. Informed PIC that these foods can be kept on time for today. PIC placed these foods on time. Discussed with PIC that the white plastic containers being used for the products in the units are not capable of facilitating heat transfer as well as metal containers. Discussed switching pan material to help facilitate the cold holding. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
