Observed green salsa cold holding at internal temperature of 60 deg F in the front reach in unit holding >41 deg F. Manager placed in walk in. Observed pooled eggs holding on counter by stove at internal temperature of 82 deg F. Cook placed in walk in. Observed Cheddar cheese, feta, Coito and shredded chicken cold holding at internal temperature of 46 deg F in a reach in unit holding >41 deg F. Owner informed the food items had been cold holding in unit since earlier in day and placed in walk in. Corrective Action: Corrected at time of inspection.

Currently there is no TCS cold holding in unit and Manager has called for repair. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed pinto beans at 74F-76F on a rack in the walk-in cooler. Per PIC, the beans were cooked this morning and then placed in the walk-in cooler at 2PM. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

Observed corn in the steam table with an internal temperature range of 86F-90F. Checked the temperature of the water in the steam table and it was at 96F. Per PIC, the corn was just opened and place in the steam table less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection.
