Inspector's notes

Observed multiple covered TCS/RTE items (egg salad sandwich, ham sandwich, tuna sandwich, fruit cups with cut melon, and pasta salad with cut tomatoes) at a temperature of 52*F located in display cooler that had an ambient temperature of 40*F. Per PIC, items had been placed in cooler 1.5 hours prior to inspection. PIC was instructed to place TCS/RTE items uncovered in standing fridge to cool down to 41*F. Also observed the half and half carafe on the counter with an internal temperature of 62*F. PIC stated that half and half had been placed on counter 2.5 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed and provided time as a control guidance document to PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Observed the half and half carafe on the counter with an internal temperature of 62*F. Informed PIC that the half and half is TCS and needs to be maintained at 41*F or below. PIC informed that it was placed there 4 hours prior. Instructed PIC to discard the half and half carafe and replace it with a new one. PIC discarded the half and half at time of inspection. Suggested time as a control for the half and half. Provided the time as a control guidance document via email. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a can of Raid Insect Killer stored underneath the front cashier counter. Informed PIC that pest control chemicals cannot be stored onsite due to being an eating and drinking establishment. Informed PIC that if pest control is needed it must be applied by a certified applicator. Instructed PIC to discard the can at time of inspection. PIC discarded the can at time of inspection. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-7-201.11 - Priority: Separation-Storage Addl Notes: Observed a bottle of all-purpose cleaner stored above coffee hot holding units and single-use cups in the back storage room. Informed PIC that chemicals must never be stored above equipment or single-use service items. PIC relocated the bottle to an area where there is no opportunity for contamination of service equipment or articles. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
