Pre-cooked sausage patties in top left section of sandwich make table measured at 45-46 deg F. All other items in the refrigerator were holding at 41 deg F or below. The sausage patties were moved to the walk in cooler to cool 41 Deg F. Temperatures were verified with establishment thermometer. Person in Charge stated the refrigerator temperature was measured this morning and it was below 41 Deg F. Recommended to keep the lid to the make line closed during lunch rush. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. >>>Observed food items out of temperature - sausage patties (48*F-51*F) and eggs (50*F-51*F) located in the top portion of the main make line cold unit and butter (51*F) in the bottom drawer of the unit. The ambient temperature of the top portion of the unit was 53*F and the bottom was 51.8*F using min/max thermometer. Notified the person in charge and they moved all TCS foods from the bottom of the unit to the walk in and used as ice bath for the food items on the top. The food was placed in the unit at 6am and time of inspection was 9am. Cooled food inside main walk in to below 41*F after 30 min confirmed. ===Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Notified person in charge and they will put a work order in. Person in charge moved all of the food items from the bottom drawers to the walk in and placed all of the food items located on the top in a ice bath. Discussed with the person in charge not using the bottom portion of the unit until it is able to maintain an ambient temperature of 41*F or below and to use ice baths for the food items on top, making sure they are maintaining an internal temperature of 41*F or below for all TCS food items. Re-inspection: 3/13/24 Correct By: Correct Prior To Reinspection
