Person in charge states these food items were put in the prep cooler less than 3 hours and moved them to the walk in cooler. Observed these food items dropping in temperature appropriately at the time of inspection. Discussed how all time/temperature control for safety (TCS) foods that are cold held must keep an internal temperature of 41*F or below to prevent bacterial growth.
