Observed pooled eggs cracked from raw shelled eggs stored directly over RTE food item (pico de gallo) in standing reach-in refrigerator located by prep table. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed pico de gallo, cut lettuce, oaxaca cheese, and fresco cheese measured 46-50'F in tabletop prep cooler located by hot-holding steam unit. Ambient temperature of unit observed at 46.4'F. PIC stated all food items were prepped from cold or ambient room temperature at 10am (less than 4 hours ago) and placed in prep cooler after prep. TCS foods prepared from cold or ambient room temperature ingredients must be cooled from 70°F to 41°F within 4 hours. All items were moved to alternative refrigeration to be rapidly cooled to 41'F at item of inspection. Corrective Action: Corrected at time of inspection.

Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PIC put a work order in and an out of order sign at time of inspection. PIC agreed to not use until it has been fixed. Fix unit prior to reinspection scheduled on 09/26/2024. Corrective Action: Correct prior to re-inspection.

Person in charge attempted to fix dishwasher but was unable to do so by end of inspection. Discussed with person in charge (PIC) to wash dishes at 3-comp sink and chemical dishwasher located at the bar. PIC agreed to not use dishwasher in question until unit has been fixed. PIC put in work order at time of inspection and put up a out of order sign for equipment in question. Chlorine sanitizer at mechanical warewashing equipment shall be dispensed within the concentration range of 50-100ppm. Correct By: Corrected At Time Of Inspection
