PRIORITY VIOLATION-7-204.11, P: Sanitizers, Criteria-Chemicals Observed an in use wiping cloth sanitizer bucket near the main coffee prep counter with a quaternary ammonium (quat) concentration over 400 PPM. Quat sanitizer concentrations shall be between 150-400PPM. Large concentrations of sanitizer in excess can be harmful because residues of the materials remain. The wiping cloth bucket was emptied at time of inspection. Discussed utilizing test strips when preparing sanitizer. Correct By: Corrected At Time Of Inspection
