In the walk in refrigerator observed a tightly covered container of cooked noodles/66°F, a tightly plastic wrapped container of cooked rice/83°F, a tightly plastic wrapped container of cooked pork dumplings/47°F, and container of cooked beef/88°F over 5 inches deep. In the upper section of the line prep refrigerator observed a container of cooked pork dumplings/ 49°F. After discussion with the person in charge it was determined the noodles, rice, and beef had been cooling for ~1.5 hours. After discussion with the person in charge it was determined the pork dumpling had been cooling since ~4 hours.
