Observed organic matter build-up on nozzles soda guns stored clean. Food contact surfaces shall be clean to the sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Suggested PIC to have soda nozzles cleaned nightly prior to being stored overnight to prevent attracting fruit flies. Corrective Action: Corrected at time of inspection.

PIC stated food was being cold stored overnight in the unit with an ambient temperature of 40'F. Food items in question has been out of temperature for longer than 4 hours. TCS food items must be cold held at 41'F or below. Discussed usage of shallow metal containers and removing lids to allow better airflow when kept overnight.
