Observed cooked pasta cooling in covered container in walk-in at 75 °F and cooked corn cooling in prep cooler at 90 °F. Pasta had begun cooling 1.5 hours prior and corn had begun cooling less than one hour prior as per person in charge. Time/temperature control for safety (TCS) foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Pasta was split into shallow, uncovered containers and corn was placed in ice bath at time of inspection to rapidly cool to 41 °F. Corrective Action: Corrected at time of inspection.
