Observed rotisserie chickens with internal temperature between 110F - 120F on the bottom shelf of the hot holding reach next to the deli case. The person in charge stated the chickens had been cooked and placed for hot holding at 10 am, which was more than 2 hours ago. The person in charge disposed of the chickens on the bottom shelf at the time of inspection and placed a work order for the unit. Discussed proper minimum hot holding temperature of 135F.
