Inspector's notes

Marinara sauce in hot holding unit found with internal temperature of 110-170*F. Only the outer most edges of the sauce nearest the container were at temperatures above 135*F while the center was at 110*F and the majority of the middle was below 135*F. PIC stated the sauce was heated through the pizza oven about 2 hours ago and then placed in the hot holding unit. The hot holding unit was set to 8/10 on its dial. While the sauce likely was above well above 135*F after coming out of the oven, it was unknown how long the sauce was below 135*F. PIC discarded the sauce and will monitor the next batch to make sure the unit is able to maintain the sauce at 135*F or above after the sauce has been properly heated through the oven. Please ensure hot held TCS food items are maintained at 135*F or above. Corrective Action: Corrected at time of inspection.

PIC stated the temperature was checked at 10:00 AM and moved the products to the walk-in for cooling and continued cold holding. The big make-line cooler was checked the start of the inspection and the TCS products were found to be at 41*F or below prior to 2:00 PM. Noodles in small make line cooler found with internal temperature of 45-48*F. PIC stated the cooler was last checked at 10:00 and had a temperature of 41*F or below. The noodles were the only TCS food item in the cooler since yesterday. The small make-line temperatures were verified at the end of the inspection around 2:40 PM and the noodles were discarded. The other TCS food items in the small make cooler were recently prepared and moved to the walk-in for continued cooling. Please ensure cold held TCS food items are maintained at 41*F or below. Salads in the cooler were just prepared at 1:00 PM and placed in the salad cooler to cool. Ambient temperature of 52*F was noticed at 2:00 PM. PIC moved the salads to the walk-in for continued cooling. No TCS food items will be placed in the salad cooler until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Big make line prep cooler found with ambient temperature of 44-48*F. The ambient temperature seemed to rise the more the doors to the cooler were opened. PIC moved the TCS food items that were on the lower portion of the cooler to the walk-in for continued cold holding. The upper portion was placed in an ice bath. The bottom portion of the cooler will not be used for cold holding TCS food items until it is repaired/replaced and able to maintain an ambient temperature of 41*F or below. Please repair/replace these coolers within the next 10 days. Correct By: Correct Prior To Reinspection
