SECOND CONSECUTIVE. Observed half used bags of chili and cheese (100-111°F), which had been in the dispenser for 3 days, below the required hot holding temperature 135°F (see embargo). Alerted the manager who placed a work order in for the dispenser at time of inspection. A reinspection on the hot holding unit will occur in 10 days. Discussed hot holding requirements and food safety risks with staff. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed shredded cheese (46°f), various cooked meats (45-48°F), cooked and cooled salsas (46-47°F), raw shelled eggs (45°F) in the small standing walk in, cold holding above 41°F. The small standing refrigerator measured 45.8°F on the min/max thermometer. Alerted staff who stated only the salsa had been in the unit for more than 6 hours (see embargo). Maintenance arrived onsite and it was determined the hinges on the refrigerator door was causing it to remain slightly open. Retook internal temperature with the min/max, once the door was fully sealed, which read 39.5°F. Discussed the importance of routinely checking cold holding temperatures. Corrective Action: Corrected at time of inspection.
