There was no approved hand drying provision at the hand sink at the start of the inspection. Person in charge (PIC) re-filled the paper towels at time of inspection. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC provided hand drying provision for handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

PIC removed the cans of Raid from the establishment at time of inspection. All pest control for the establishment must be performed by a certified pest control specialist and chemicals for pest control must not be stored onsite. PIC removed pest control chemicals from premises at time of inspection. Corrective Action: Corrected at time of inspection.

Observed a large 50 quart pot of cooling tomato sauce at 55-62*F. Per manager it was cooked 8.5 hours prior and placed in the walk in cooler 6.5 hours prior. The ice wands in the pot were melted and the pot was covered with a lid. Discussed proper cooling methods. Discussed monitoring cooling products throughout the entirety of the cooling period. Because the sauce was not below 41*F after 6 hours, the sauce was embargoed.
