***** 2nd Consecutive Violation ***** In the hot holding steam table observed cooked pork at 118*F, cooked sausage at 125*F, mac n cheese at 116*F, and cooked yams at 128*F. All hot holding TCS foods must be kept at 135*F at all times. Per manager, all foods had been in the unit for approximately 1 hour. All foods were reheated prior to returning to hot holding.
