Observed 2 packages of Buri fillets and a package of cooked eel all with the label to keep the food frozen and to remove the foods from their vacuum packaging prior to thawing. All fish were still in their original vacuum sealed packaging and thawed. When thawing fish with these labels, they must be fully removed from the vacuum packaging when starting the thawing process. Discussed proper thawing procedures with manager.

Observed an unapproved veggie slicer stored on the dry food shelving. Per manager, the slicer is used for red and green onions. All equipment must be NSF/ANSI approved. Equipment must also be smooth, durable, and easily cleanable. Slicer must be removed from the kitchen. Manager removed slicer at time of inspection.
