Discussed with PIC all food-contact surfaces shall be cleaned at a frequency to avoid accumulation of organic matter and must be cleaned to sight and touch. Inspector's notes

Observed cooked pasta (56'F) and cut leafy greens (52'F) in drawers of main tabletop prep cooler unit in kitchen. PIC stated unit is emptied at end of day and food items are moved to walk-in unit for overnight storage. Food items were stocked less than an hour prior and have been out of temperature for less than 4 hours. Ambient temperature of unit measured 54.2'F. Establishment observed with more than adequate coldholding capacities and PIC agreed to not use unit until it has been fixed. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
