Inspector's notes

Observed bag of cut lettuce and bag of cheese held at 75F in cooler drawer. Cooler not on at time of inspection. PIC reports cooler had not been on and in use since last event held on site at least one day before. Bags of cut lettuce and cheese improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Person in charge had an order for it to be fixed prior to inspection. Discussed the importance of having all handwashing sinks working properly to ensure proper handwashing is occurring.
