Inspector's notes

Observed cooked peppers, cooked mushrooms, cooked eggs, cheese, ham, and cooked onions in prep coolers at both ends of kitchen measured at 49-51F. PIC reported all items stocked less than 3 hours prior to inspection. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

Observed large plastic container of alfredo sauce in walk in cooler with lid secured. PIC reports this is still cooling. Alfredo sauce cooling was uncovered to allow for rapid cooling. Alfredo sauce being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.

Observed bottle of wine being stored in contact with ice in well at end of bar as well as scooping ice from same well for beverages. Ice used as an exterior coolant may not be used as an ingredient in any food/drinks. Person in charge (PIC) removed bottles from ice wells, burned the ice, sanitized the well, and refilled the ice at time of inspection. Corrective Action: Corrected at time of inspection.
