Observed TCS equipment (Grinder) that had been used the previous day was not cleaned and was still dirty at the time of inspection. The Person in Charge (PIC) stated that the equipment had been used the previous day to grind chorizo and had not been properly cleaned. Equipment used for TCS food must be cleaned and sanitized as required to prevent contamination. All food-contact surfaces must be cleaned to sight and touch. Correct prior to next routine inspection.
