Discussed with Person in Charge (PIC) 1. fixed equipment that is not easily moved to be properly cleaned shall be sealed with caulking to prevent accumulation of contaminants. 2. hood ventilation shall have high temperature caulking along the seams of fixed parts to prevent accumulation of grease over time. 3. storage of in-use utensils during pauses in food preparation or dispensing, such as in the food, clean and protected, or under running water to prevent bacterial growth. If stored in a container of water, the water temperature must be at least 135°F.

Per PIC a work order will be put in to have new caulking applied. Corrective Action: Correct prior to next routine inspection.
