The person in charge (PIC) verified the temperatures using the establishment's thermometer. Per PIC, the unit was checked earlier today and was at 45*F. The food items were embargoed and voluntarily discarded by the PIC at the time of inspection. Discussed not using the unit until is able to hold TCS foods at 41*F or below. In the reach-in cooler, cartons of raw eggs were found above ready-to-eat food such as pasta, apples, salad, and other foods. The raw eggs were moved to the lowest shelf at the time of inspection. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.

Observed numerous roaches (50+) in the kitchen areas, mainly in the dry storage areas. The person in charge (PIC) was shown the areas with roaches. The PIC spoke to the pest control company and stated the current pest control plan does not target roaches. The PIC requested a pest control plan that incorporates roaches. The PIC scheduled a treatment for the following day. The PIC was instructed to follow the pest control guidance and recommendations for eliminating roaches from the kitchen. During inspection observed two cartons of raw shell eggs on the top shelf of the reach-in refrigerator above ready-to-eat foods such as cucumbers, golden berries, blackberries, and tortillas. One of the eggs inside the carton was broken. The person in charge (PIC) removed the eggs and place them on the bottom shelf of another reach-in refrigerator at the time of inspection. Please ensure raw meats and proteins are kept below and way from ready-to-eat products to prevent cross contamination. Reviewed and another provided proper cold holding food separation handout. In the large vertical reach-in cooler TCS yogurt and chicken quesadillas had internal temperatures of 47*F-52*F . The person in charge (PIC) verified the temperature using the establishments thermometer. The PIC did stated no temperature checks were done today. The PIC stated an employee likely left the refrigerator door open, but did not know how long. The yogurt and quesadillas embargoed and voluntarily discarded by the PIC at the time of inspection. The PIC was instructed not to use this unit it is repaired/replaced. The PIC will use the other working unit to store TCS Foods. Correct By: Corrected At Time Of Inspection
