At service line, observed broccoli/109-112F and green beans/121F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Food were within safe time parameters, but PIC opted to discard the product at time of inspection. The thermostat was also turned higher on the steam bath for the vegetables. Corrective Action: Corrected at time of inspection.
