Based on a predictive growth curve modeling program for Listeria monocytogenes, ready-to-eat, time/temperature control for safety food may be kept at 41F, for a total of 7 days.

Observed in 3 door true main make line refrigerators to left of ovens with tcs foods in all in temperature danger zone (41*F-135*F). Internal digital thermometer showed 51*F. Notified Person In Charge (PIC). PIC showed inspector temperature log for today. Log indicated unit is at 46*F. Unit ambient temperature with min/max thermometers was 49.9*F-50.8* F. Inside the unit was two large bags of cut leafy lettuce, one opened and one closed with internal temperature from 46*F-54*F; two other containers of cut lettuce on top rail at 46*F-49*F; container of cut tomatoes at 53*F. Notified PIC. PIC had employee ice bath and place into main walk in unit to cool all tcs foods listed to main walk in to cool to below 41*F. Verified after 1 hour. =========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. 2nd Consecutive violation. Corrective Action: Corrected at time of inspection.

Observed in all 3 true main make line refrigerators with tcs foods in all in temperature danger zone (41*F-135*F). Notified Person In Charge (PIC). PIC showed inspector temperature log for today. Calibrated thermometers. Unit to left of hot holding line had ambient temperature of 44.7*F-47.6*F with min/max thermometer. Inside the unit was three containers of cut leafy lettuce from 44*F-50*F; cooked cut eggs at 47*F; cooked chicken at 45*F-46*F; shredded cheeses at 50*F; container of mozzarella cheese shredded at 53*F. Directed PIC to have employees move all tcs foods listed to main walk in to cool to below 41*F. Main refrigeration unit to right of oven had ambient temperature of 44.9*F-51*F with min/max thermometer. TCS products: cooked slices of ham 50*F; cooked onions at 50*F; cooked turkey at 50*F etc. Directed PIC to move all products to main walk in to cool to 41*F. On refrigeration unit to left of main oven had ambient temperature of 44.9*F with min/max thermometer. On top of unit medium size container of cut lettuce and cut tomatoes at 50*F. Notified PIC, PIC will move all tcs foods listed to main walk in to cool to 41*F. Verified after 1 hour. =========Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
