Observed large water-damaged spots on the ceiling near the register. Tiles were discolored and bulging. The PIC stated they had previously had a roof leak that was repaired and they are now waiting on the replacement ceiling tiles. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to the next routine inspection. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. Observed various dairy based milks (45-56°F) and Naked Juices (46°F-52°F) above 41°F, in the grab and go open-faced cooler. The all Time Temperature Control for Safety (TCS)drinks had been stocked on 8/22 (more than 4 hours prior to temperature measurement). The Person in Charge (PIC) was alerted and discarded the Time Temperature for Control (TCS) drinks. The cooling unit measured at 50.7°F with the min/max thermometer. Manager will not place TCS drinks the grab and go cooling unit until it can maintain temperatures below 41°F. Discussed cold holding requirements. Correct By: Corrected At Time Of Inspection

Observed a grab and go open-faced cooler measuring 50.7°F with the min/max thermometer. The manager alerted the supervisor who placed a work order on the cooler. All TCS drinks were in the grab and go cold holding unit for more than 4 hours and were discarded (see embargo). Staff to not use the grab and go cold holding unit to store TCS drinks, until the unit is able to maintain at or below 41°F. A reinspection on the cold holding unit will be conducted within 10 days. A picture of the maintenance receipt along with a notation that the equipment was fixed can be sent electronically via email. Correct By: Correct Prior To Reinspection
