Inspector's notes

Observed substantial delay in hot water supply at the majority of faucets in the establishment. Observed availability of hot water was prolonged when multiple faucets were turned on simultaneously. Observed staff demonstrate hot water availablity was conditioned on having to run the hot water at the mop sink and leave it running for extended time in order to facilitate delivery of hot water to the other sinks in the establishment. Discussed hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment. Re-inspection 01/31/25. Corrective Action: Correct prior to re-inspection.

Observed a build up of food debris under the storage racks and on the walls of the walk-in cooler. Observed accumulation of food debris along the back wall of the raw chicken prep station, directly above on the metal shelf brackets, the slotted shelves, and on equipment stored on the shelves. Observed a build up of food debris on the handles of the food containers and handles of the reach in cooler on the raw chicken prep line.

PRIORITY VIOLATION-5-402.13, P: Conveying Sewage Observed slow draining floor sink under the three compartment sink resulting in overflow of the floor sink and standing water under the three compartment sink, under storage racks with clean dishes, in between compressed gas cylinders, and under boxes of soda syrups. The person in charge cleared the floor sink of food debris to allow the water to drain at a sufficient rate so as not to overflow the floor sink and placed a work order for plumbing services.
