PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. =====Observed several tcs foods in temperature danger zone on main sandwich line. Ambient temperature of the unit is at 43.5*F. Inside the unit was container of cut tomatoes at 44*F; Cooked gryo meat at 56*F-60*F; cooked pastrami at 50*F; turkey at 48*F. Notified Person In Charge (PIC). Per PIC the unit was stocked prior to 10am. PIC will move all listed tcs foods to cool inside walk in unit to 41*F. After 30 minutes all foods are below 41*F. ============ Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
